Ingredients:
- Butter - 1/4 cup( at room temperature)
- Powdered sugar - 1/4 cup (grind sugar in to fine powder to mix well with butter)
- Vanilla essence - 1/2 tsp
- Maida/All purpose flour - 1 cup
- Baking powder - 1/2 tsp
- Salt - a pinch ( if you are using unsalted butter otherwise don't add salt again)
- Choco chips - 1/4 cup
Method:
- Preheat oven to 180 degrees celsius for 10minutes.
- In a bowl whip butter with a spoon or hand blender, then add sugar powder and mix it with butter till creamy texture is obtained.
- Sieve all purpose flour and baking powder together, add these sieved dry ingredients, vanilla essence, a pinch of salt (if using unsalted butter) and choco chips to the butter -sugar mixture and make as a soft dough( like chapathi dough).
- Take spoonfull of dough and make as a round ball and flatten it slightly. Don't make it too thin or too thick.Repeat it for entire dough.Otherwise you can roll it as a thick chapathi and cut it in to desired shapes using cookie cutter.
- Take a baking tray,line it with a parchment paper to avoid cookies sticking to bottom. Place the shaped cookies on the tray and bake them at 180 degrees celsius for 15 - 20 minutes or until cookies becomes golden brown colour.
- Take the baking tray from oven carefully and transfer the cookies to another plate. Allow the cookies to cool completely and become firm. Serve with hot coffee or tea.
Note:
- Use powdered sugar only(grind sugar into fine powder) otherwise it will not properly mix with butter.
- They may be slightly soft immediately after taking out from oven but once cooled completely they get firm.
- Cookies become hard if baked for long time.
Tip:
- Store cookies in air tight container for long term use.
- If cookies becomes soft after some time microwave them for few seconds to regain it's firmness.
