JEELAKARRA KARAM is one of the Masala Powders which we make at home to use in Fry dishes like Aloo fry, Dondakaya fry etc. It gives superb taste to the dish along with a nice aroma.
Ingredients:
1. Jeelakarra(cumin seeds) ----- 2 tbsp or 1/4 cup
2. Dried Red chilli ----- 20 no's(approx) or 1 cup
3. salt ----- As per taste

Procedure:
- Take Jeera and Dried Red chilies as per the above quantity and slightly dry roast(without adding oil) them separately for a minute in a kadai or alternatively keep Jeera and red chillis under the sun for 2-3 hours or until it gets warm.
- After roasting take them in a separate plate and allow it to cool for some time.
- Once it is cooled take Jeera, Red chillies and also required amount of salt in to a mixie jar and make it as a coarse powder.
- Now the tasty Jeelakarra Karam is ready to use in your dishes.
TIP:
- You can also add velluli(garlic) to get a nice taste. But in our house we don't mostly use velluli(garlic) and especially we don't use on festive days. So i did not added here.
- Store in an air tight jar to lock the aroma.
- If you don't have time to prepare this powder you can also add Jeera (cumin seeds) directly while frying the vegetables and lastly add salt and red chilli powder to give similar taste. ( But some people may not like seeing Jeera in fried dishes so use this method when Jeelakarra Karam is nor readily available)
